Keto Almond Flour Pancakes

Ingredients
- 2 cups almond flour
- 6 eggs eggs
- 4 oz cream cheese softened
- 1 tsp vanilla extract
- 1 tsp cinnamon
- 3 tbsp erythritol or stevia
- 1 tsp baking powder
- 0.25 tsp salt
- 2 tbsp butter for cooking
Instructions
- Blend eggs, cream cheese, vanilla extract, and sweetener in a food processor until smooth.
- Add almond flour, cinnamon, baking powder, and salt. Blend until combined and batter is smooth.
- Heat a non-stick skillet or griddle over medium heat. Lightly butter the surface.
- Pour small pancakes (about 3 inches) onto the griddle and cook 2-3 minutes until edges look set.
- Carefully flip pancakes and cook another 1-2 minutes until golden on both sides.
- Serve warm with butter, sugar-free syrup, fresh berries, or whipped cream.
