Cream of Mushroom Soup

Ingredients
- 1.5 lbs mushrooms sliced
- 4 tbsp butter
- 1 medium onion diced
- 3 cloves garlic minced
- 4 cups vegetable broth
- 1 cup heavy cream
- 0.75 tsp salt
- 0.5 tsp black pepper
- 2 sprigs thyme fresh
- 1 leaf bay leaf
- 2 tbsp all-purpose flour
- 2 tbsp parsley fresh chopped
Instructions
- Heat butter in a large pot over medium-high heat. Add diced onion and sauté 4-5 minutes until softened.
- Add minced garlic and sliced mushrooms. Cook 8-10 minutes, stirring occasionally, until mushrooms release their moisture and start to brown.
- Sprinkle flour over mushrooms and stir to coat. Cook 1 minute to remove raw flour taste.
- Pour in vegetable broth and add thyme and bay leaf. Bring to a boil, then reduce heat and simmer 10 minutes.
- Remove thyme and bay leaf. Stir in heavy cream and season with salt and pepper to taste.
- Simmer 2-3 minutes more until soup is heated through. Serve hot, garnished with fresh parsley.
