Easy Chicken Tacos
Juicy seasoned chicken piled into warm tortillas with fresh toppings. A crowd-pleasing dinner that comes together in about 25 minutes with bold Mexican-inspired flavors.

Ingredients
- 1.5 lb boneless skinless chicken thighs
- 2 tsp chili powder
- 1 tsp cumin
- 1 tsp smoked paprika
- 0.5 tsp garlic powder
- 2 lime
- 12 small flour or corn tortillas
- 2 avocado
- 0.5 cup fresh cilantro
- 0.5 red onion
- 0.5 cup sour cream
- 2 tbsp olive oil
Instructions
- Mix chili powder, cumin, smoked paprika, garlic powder, 1 tsp salt, and a pinch of black pepper in a small bowl.
- Pat the chicken thighs dry and rub generously with the spice mixture on both sides. Let sit for 5 minutes at room temperature.
- Heat olive oil in a large skillet over medium-high heat. Cook the chicken thighs for 5-6 minutes per side until charred on the outside and cooked through (internal temp 165 F). Rest for 3 minutes.
- While the chicken rests, dice the avocado, finely chop the red onion, and roughly chop the cilantro. Warm the tortillas in a dry skillet or directly over a gas flame.
- Chop or shred the chicken into bite-sized pieces. Squeeze the juice of one lime over the chicken and toss.
- Build tacos: layer chicken in warm tortillas and top with avocado, red onion, cilantro, a drizzle of sour cream, and a squeeze of fresh lime. Serve immediately.
