Grilled Corn with Cotija and Cilantro

Ingredients
- 4 ears fresh corn on the cob
- 0.5 cup cotija cheese crumbled
- 0.25 cup fresh cilantro chopped
- 2 limes lime
- 3 tbsp mayonnaise
- 1 tbsp olive oil
- 1 clove garlic minced
- 0.5 tsp salt
- 0.25 tsp black pepper
- 1 tsp tajÃn seasoning
Instructions
- Peel back corn husks but leave them attached at base. Remove silk and soak corn in water for 15 minutes.
- Mix mayonnaise with minced garlic, lime zest, salt, and pepper to make seasoned spread.
- Preheat grill to medium-high heat. Pull husks back up over corn and grill 10-12 minutes, turning occasionally, until kernels have light char marks.
- Pull husks down to expose kernels. Brush grilled corn generously with garlic mayonnaise.
- Roll corn in crumbled cotija cheese until coated. Sprinkle with fresh cilantro and tajÃn seasoning.
- Squeeze fresh lime juice over corn and serve immediately while warm.
