Hearty Lentil and Sausage Soup

Ingredients
- 1 lb italian sausage
- 1.5 cups lentils dried
- 1 can (28 oz) diced tomatoes canned
- 6 cups vegetable broth
- 1 large onion diced
- 4 cloves garlic minced
- 0.75 tsp salt
- 0.5 tsp black pepper
- 2 cups carrots sliced
- 1 cup celery diced
- 1 tsp italian seasoning
- 2 cups spinach fresh
Instructions
- Brown italian sausage in a large pot over medium-high heat, breaking it into crumbles. About 5-7 minutes. Remove and set aside.
- In the same pot, sauté diced onion, minced garlic, carrots, and celery until softened, about 5 minutes.
- Add lentils, diced tomatoes with juice, vegetable broth, and italian seasoning. Stir well.
- Bring to a boil, then reduce heat and simmer 25-30 minutes until lentils are tender.
- Stir in cooked sausage and fresh spinach. Simmer 2-3 minutes until spinach wilts.
- Season with salt and pepper to taste. Serve hot. The soup will thicken as it sits.
