Homemade Beef Burgers

Ingredients
- 1.5 lb ground beef (80/20)
- 4 brioche burger buns
- 4 sharp cheddar cheese slices
- 1 tbsp Worcestershire sauce
- 1 tsp garlic powder
- 2 tbsp butter
- 4 leaves iceberg lettuce
- 1 large tomato
- 0.5 red onion
- 8 slices dill pickles
- 4 tbsp ketchup
- 2 tbsp yellow mustard
Instructions
- In a large bowl, gently mix the ground beef with Worcestershire sauce, garlic powder, 1 tsp salt, and 0.5 tsp black pepper. Handle the meat as little as possible to keep it tender.
- Divide the mixture into 4 equal portions and shape into patties slightly larger than your buns (they shrink when cooking). Press a shallow dimple into the center of each patty to prevent puffing.
- Heat a cast-iron skillet or grill over high heat until screaming hot. Cook patties for 3-4 minutes on the first side without pressing them down. Flip, immediately top with cheese, and cook another 3 minutes for medium.
- In the last minute, cover the skillet with a lid or dome to melt the cheese. Meanwhile, butter the buns and toast them on another skillet or under the broiler until golden.
- Slice the tomato and red onion into thin rounds. Layer the buns with lettuce, tomato, the cheesy patty, pickles, onion, ketchup, and mustard.
- Serve immediately while the cheese is still melty. Pair with crispy fries or a simple side salad.
