Honey-Soy Glazed Salmon with Roasted Broccoli

Ingredients
- 4 pieces 6oz each salmon fillets skin on
- 4 cups broccoli florets
- 3 tbsp soy sauce
- 2 tbsp honey
- 1 tbsp rice vinegar
- 3 cloves garlic minced
- 1 tbsp fresh ginger minced
- 1 tbsp sesame oil
- 2 tbsp olive oil
- 1 tbsp sesame seeds
- 2 pieces green onions chopped
- 0.5 tsp salt
- 0.25 tsp black pepper
Instructions
- Preheat oven to 400°F. On a sheet pan, toss broccoli florets with 1 tablespoon olive oil, salt, and pepper. Spread in a single layer on one side of the pan.
- Pat salmon fillets dry with paper towels and arrange on the other side of the sheet pan, skin-side down. Drizzle with remaining 1 tablespoon olive oil and season with salt and pepper.
- In a small bowl, whisk together soy sauce, honey, rice vinegar, minced garlic, minced ginger, and sesame oil to make the glaze.
- Brush the glaze generously over the salmon fillets. Reserve some glaze for the vegetables if you like.
- Bake for 15-18 minutes until the salmon is cooked through and flakes easily with a fork (internal temp should reach 145°F), and the broccoli is tender and the edges are slightly charred.
- Remove from oven and sprinkle sesame seeds and chopped green onions over the salmon and broccoli. Serve immediately, drizzling any pan juices over everything. Serve with rice or quinoa for a complete meal.
