Italian Sausage and Bell Pepper Skillet

Ingredients
- 1.5 lb Italian sausage links
- 2 red bell pepper
- 1 green bell pepper
- 1 large yellow onion
- 4 garlic cloves, minced
- 1 14oz can crushed tomatoes
- 2 tbsp olive oil
- 1 tsp Italian seasoning
- 0.25 tsp red pepper flakes
- 0.5 tsp salt
- 0.25 tsp black pepper
- 4 leaves fresh basil
- 2 tbsp parmesan cheese
Instructions
- Slice the sausage links into 1-inch rounds. Seed and slice the bell peppers into strips. Slice the onion into half-moons.
- Heat olive oil in a large skillet over medium-high heat. Add the sausage rounds and cook without moving for 3 minutes until browned on one side. Flip and brown the other side for 2 minutes. Remove to a plate.
- In the same skillet with the rendered fat, add the sliced bell peppers and onion. Cook for 5-6 minutes, stirring occasionally, until the peppers soften and get some char.
- Add the minced garlic, Italian seasoning, and red pepper flakes. Stir for 30 seconds until fragrant.
- Pour in the crushed tomatoes and stir to combine. Return the sausage to the skillet and nestle it into the sauce.
- Reduce heat to medium-low and simmer for 8-10 minutes until the sauce thickens slightly and the sausage is cooked through (165°F internal).
- Season with salt and pepper to taste. Tear fresh basil over the top and finish with grated parmesan. Serve over crusty bread, pasta, or polenta.
