Matcha White Chocolate Energy Bites

Ingredients
- 1 cup medjool dates pitted
- 2 tbsp matcha powder
- 0.5 cup white chocolate melted
- 0.25 cup almond butter
- 0.5 tsp vanilla extract
- 1 tbsp coconut oil
- 0.125 tsp sea salt pinch
- 0.25 cup shredded coconut for coating
Instructions
- Place pitted medjool dates in a food processor and pulse until they break down into a sticky paste. If the dates are very dry, you can soak them in warm water for 5 minutes first.
- In a small bowl, melt white chocolate with coconut oil in 30-second intervals in the microwave, stirring between intervals, until smooth.
- Add the date paste to a mixing bowl and stir in the melted white chocolate, matcha powder, almond butter, vanilla extract, and sea salt.
- Mix until everything is well combined. The mixture should be thick, dense, and easy to roll.
- Line a plate with parchment paper. Roll the mixture into 1-inch balls using your hands or a small cookie scoop.
- If coating with shredded coconut, roll the energy bites immediately after forming. Place on the lined plate and refrigerate for at least 30 minutes until firm. These keep in the fridge for up to 2 weeks in an airtight container.
