Peanut Butter Chocolate Granola Bars
Chewy, satisfying granola bars with peanut butter and chocolate chips. A homemade snack that's much cheaper and healthier than store-bought versions.

Ingredients
- 2 cups rolled oats
- 0.5 cup peanut butter
- 0.5 cup honey or maple syrup
- 2 tbsp coconut oil
- 0.25 cup brown sugar
- 0.5 tsp salt
- 0.5 tsp vanilla extract
- 0.75 cup semi-sweet chocolate chips
- 0.5 cup chopped almonds or walnuts
Instructions
- Preheat oven to 350°F. Line a 9x13 baking pan with parchment paper, leaving an overhang so you can easily remove the finished bars.
- In a large bowl, combine rolled oats, salt, and vanilla extract. In a small saucepan, heat peanut butter, honey, coconut oil, and brown sugar over low heat until melted and combined.
- Pour the warm peanut butter mixture into the oats and stir thoroughly until all the oats are coated evenly.
- Press the mixture firmly into the prepared baking pan, using a spatula or your hands to make an even, compact layer.
- Bake for 18-20 minutes until the edges are golden brown but the center still feels slightly soft to the touch.
- Remove from oven and immediately sprinkle chocolate chips over the top. Let sit for 2-3 minutes to soften, then spread evenly with a spatula. Sprinkle chopped nuts if using. Let cool completely in the pan for at least 2 hours before cutting into bars. Store in an airtight container for up to a week.
