Cilantro Lime Shrimp Tacos

Ingredients
- 1.5 lb large shrimp peeled and deveined
- 2 tbsp olive oil
- 3 tbsp lime juice fresh
- 0.5 cup fresh cilantro chopped
- 3 cloves garlic minced
- 0.5 tsp cumin
- 0.75 tsp salt
- 0.5 tsp black pepper
- 8 pieces warm corn tortillas
- 2 cups shredded cabbage
- 1 medium avocado sliced
- 0.75 cup salsa or pico de gallo
Instructions
- In a bowl, combine lime juice, olive oil, chopped cilantro, minced garlic, cumin, salt, and black pepper.
- Add shrimp to the marinade and toss to coat. Let sit for 5-10 minutes.
- Heat a large skillet over medium-high heat until hot. Add shrimp with the marinade and cook for 3-4 minutes per side until pink, opaque, and cooked through. Don't overcook or they'll become tough.
- Warm tortillas in a dry skillet for about 30 seconds per side until pliable.
- Fill each tortilla with a few shrimp, shredded cabbage, sliced avocado, and a dollop of salsa.
- Serve immediately with lime wedges on the side. These tacos are best eaten fresh while the shrimp are still warm.
