Simple Tomato Basil Chicken

Ingredients
- 4 pieces boneless skinless chicken breasts
- 2 tbsp olive oil
- 1 can 14.5oz canned diced tomatoes
- 3 cloves garlic cloves minced
- 0.5 cup fresh basil leaves
- 1 tbsp balsamic vinegar
- 0.75 tsp salt
- 0.5 tsp black pepper
- 0.5 tsp onion powder
- 0.125 tsp red pepper flakes pinch
Instructions
- Pat chicken breasts dry and season both sides with salt, black pepper, and onion powder.
- Heat olive oil in a large skillet over medium-high heat. Add chicken and sear for 5-6 minutes on each side until golden brown and cooked through (165°F). Transfer to a plate.
- In the same pan, add minced garlic and cook for 1 minute until fragrant.
- Pour in canned tomatoes with their juices. Add balsamic vinegar and red pepper flakes. Stir to combine.
- Let the sauce simmer for 5-7 minutes until it reduces slightly and the flavors meld.
- Return chicken to the pan and nestle it into the sauce. Tear fresh basil leaves and scatter over the top. Cook for another 2-3 minutes just until the basil wilts.
- Taste and adjust seasonings. Serve chicken over pasta, rice, or with crusty bread to soak up the bright tomato sauce.
