Sourdough Avocado Toast with Egg

Ingredients
- 4 slices sourdough bread thick sliced
- 2 avocados avocado ripe
- 2 eggs eggs
- 1 tbsp butter
- 1 tbsp lemon juice fresh
- 0.5 tsp salt
- 0.5 tsp black pepper
- 0.25 tsp red pepper flakes
- 0.25 cup fresh basil or arugula
Instructions
- Toast sourdough slices in a toaster or skillet until crispy and golden on both sides.
- While bread toasts, halve avocados, remove pit, and scoop flesh into a small bowl. Mash lightly with a fork and season with lemon juice, salt, and pepper.
- Heat butter in a skillet over medium-low heat. Crack eggs into skillet and cook to your preference (sunny-side up, over easy, or over medium).
- Spread mashed avocado generously on each piece of toasted sourdough.
- Top each toast with a cooked egg. Sprinkle with red pepper flakes and fresh herbs.
- Serve immediately while bread is still warm.
