Ingredients
- 2 cans 15oz canned chickpeas drained and dried
- 2 tbsp olive oil
- 1 tbsp curry powder
- 0.5 tsp cumin
- 0.5 tsp paprika
- 0.25 tsp cayenne pepper
- 0.5 tsp garlic powder
- 0.75 tsp salt
- 0.25 tsp black pepper
Instructions
- Preheat oven to 375°F. Thoroughly dry canned chickpeas using paper towels—moisture prevents crispiness.
- In a bowl, toss dried chickpeas with olive oil until evenly coated.
- In a small bowl, combine curry powder, cumin, paprika, cayenne, garlic powder, salt, and black pepper.
- Sprinkle the spice mixture over the oiled chickpeas and toss well to coat all pieces.
- Spread in a single layer on a baking sheet and roast for 25-30 minutes, shaking the pan every 10 minutes, until the chickpeas are golden and very crispy. They should sound crunchy when stirred.
- Let cool completely on the baking sheet—they'll become even crispier as they cool. Store in an airtight container for up to 5 days. Serve as a snack, on salads, or with yogurt for breakfast.
